Bar Frites Onion Soup (serves 6)
Ingredients:
4 vidalia onions, sliced 1/4” thick
2 cloves garlic chopped
4 sprigs thyme
1 bay leaf
1 tablespoon unsalted butter
2 quarts white chicken stock
3/4 cup
white wine
1/4 cup
sherry wine
6 slices
country bread
2 cups
gruyere cheese
1 cup
Emmenthaler cheese
1 cup
sliced shredded mozzarella
Preparation:
Heat sauce pot with olive oil, add onions and garlic.
Stir constantly until deep golden brown, about 30 minutes.
Add butter, thyme, bay leaf.
Deglaze with white wine and sherry.
Reduce by half and add chicken stock.
Remove thyme and bay leaf and season with salt and pepper.
Cook for 45 minutes to 1 hour.
Let simmer.
Ladle soup into oven proof bowls and add country bread.
Sprinkle 1/3 cup cheese mix.
In a pre-heated oven or broiler Cook until golden brown.

Cipollini located in Americana Manhasset, is an exciting trattoria with a vibrant menu, and Toku, also in Americana Manhasset, brings modern Asian cuisine in a sophisticated setting. In addition to their restaurants, the Poll Brothers also own the George Washington Manor which provides catering services.
General Manager of Bar Frites is Cliff Dragonetti. He has a long history in the restaurant business, starting from age 16, always on Long Island. His strong connection with the Poll Brothers, dates back almost 25 years when he worked for them from 1986 -1992 at Bryant & Cooper. He left to pursue other interests but came back as general manager of Toku in 2007. He did such a wonderful job at Toku, Gillis and George asked him to assist them with opening Bar Frites.
